Cheddar biscuits, 10.02.11
This recipe (as prepared) was featured this weekend on the Alcalde website, and, appropriately, I made these this morning for the Texans/Steelers game, but there’s nothing like setting something in stone (insofar as anything can ever be set in stone on the internet) to make you start thinking about tweaking it. On the one hand, these are extremely consistent in yield, flavor, and texture — which is great — but on the other, I accidentally picked up Bac’n Bits when I was reaching for parsley this morning, so… Let’s just say I have schemes. Parmesan-, truffle salt-, and bacon-related schemes.
